If you’ve ever wondered why two chocolate cakes from two different bakeries can taste so different — or why our Signature Cakes cost a little more — the answer almost always comes back to one ingredient: couverture chocolate.
Couverture is the chocolate professional pastry chefs reach for. It contains a higher percentage of cocoa butter than standard chocolate compound, which is what gives it the shine, the snap, and the slow melt on the palate. It’s the kind of chocolate that tastes the way it smells when you open the bag.
Most everyday cakes — ours included, in the regular Cakes range — use chocolate compound. It’s perfectly good. It’s also priced for everyday. The difference shows up on a celebration cake, where chocolate is doing a lot of the work.
Across the Signature Cakes range. The Velvet Milk Chocolate Tower is built on Callebaut milk chocolate callets — silky, mellow, mirror-glossy. The Cocoa Reserve Truffle Cake uses couverture in the sponge, in the truffle layers, and again in the finish. The Golden Ferrero Hazelnut Cake is finished in a top-brand European couverture so the chocolate coat sets cleanly and snaps when you cut into it.
Couverture costs roughly three to four times what compound chocolate does. It also handles differently — it tempers properly, sets with a real shine, and doesn’t turn waxy in the mouth. If you’ve ever bitten into a chocolate cake and felt a slight film coat your tongue, that’s compound. Couverture just… melts.
This is also why our Signature Cakes are priced where they are. We use the same chocolate the best patisseries in Paris and Brussels use, and we don’t cut corners on it. If you’re ordering a cake for a moment that matters — a wedding tier, an anniversary, the kind of birthday where photos will be taken — the difference is worth it.
If you’re ordering for everyday tea-time, our regular Cakes range is honest, well-baked, and priced fairly. Both have their place. We just like to be clear about which is which.
